  • 1 LB of ground beef (80-20)

    1 large egg

    ½ minced onion

    1 tsp salt

    ½ tsp pepper

    1 tsp garlic powder

    ½ cup dried bread crumbs

    4 hamburger buns

    4 Romaine lettuce leaves

    1 ripe tomato

    ½ onion, cut into large slices

    Ketchup

    Note: To make it vegetarian, use 1 can of drained black beans, mashed together

    Steps:

    Preheat grill to high heat with light oil

    In a small bowl, mix together egg, salt, pepper, and garlic powder

    In a separate owl, mix together ground beef, the minced onion, the breadcrumbs, and the egg-spice mixture

    Form and separate the patties

    Add burgers to the already hot grill, cooking 6 to 8 minutes on both sides (until the inside is 160 degrees Fahrenheit), and remove when desired level of [inside cookedness] is achieved

    Lightly toast the buns face down on the grill for approximately 45 seconds to 1 minute. Optional: Lightly butter the buns before toasting them

    Serve burger with a leaf of lettuce, a slice of tomato, a few slices of onions, and ketchup and mustard, and enjoy!

  • Ingredients:

    6 bell peppers

    2 tbsp olive oil

    1 lb ground beef (80-20)

    1 onion diced

    1 ½ cup rice

    1 ½ cup pasta sauce

    14 oz of diced tomatoes

    2 tsp garlic powder

    1 tsp Italian seasoning

    1 tsp salt

    ½ tsp pepper

    Optional: ½ cup shredded mozzarella

    Note: to make it vegetarian, exchange ground beef for a drained and crushed up block of tofu

    Steps:

    Preheat oven to 375 degrees Fahrenheit

    On the stove, cook the rice in a small saucepan

    Using a cutting board, cut off the top from the bell peppers and remove the core. Dice the onion.

    In a large pan, add onion and olive oil and cook until half-softened. In the same pan, add ground beef and break up to start to let it brown. Add salt, pepper, and garlic powder. Cook beef and onions together until beef is no longer pink

    Add in the cooked rice, the diced tomatoes, the Italian seasoning to the same skillet on the stove, stirring occasionally for approximately 5 to 6 minutes. When finished cooking, remove from stove and set to the side

    In a baking dish, line up peppers into two rows. Fill up each pepper with the rice, onion, beef mixture. Cover with aluminum foil Optional: add shredded mozzarella on top before covering

    Bake in the oven for approximately 35 to 40 minutes until the peppers are fork tender. If you added cheese, remove foil and broil on high for approximately 1 minute before removing from the oven

    Remove from oven and serve

  • Ingredients:

    2 zucchini cut into half-circles

    2 yellow squash cut into half-circles

    2 yellow onions cut into strips

    1 tbsp salt

    ½ tbsp pepper

    1 tbsp Italian seasoning

    1 tbsp olive oil

    Note: Can substitute with any vegetables of your choice!

    Steps:

    Preheat oven to 375

    Wash vegetables, cut into desired shapes and sizes

    On a sheet pan, place vegetables, cover in olive oil and seasonings. Mix until evenly distributed

    Cook for approximately 45 minutes, checking on them half-way through and turning if necessary

  • Ingredients:

    12 eggs hard boiled

    ¾ cup mayonnaise

    1 ¾ tsp mustard of your choice

    ½ white onion diced

    3 tsp dill

    1 tsp salt or to taste

    ½ tsp pepper or to taste

    Steps:

    Boil a large pot of water, putting in eggs carefully when the water has started to boil. Leave them in the water for 11 minutes. Remove eggs and place them into an ice bath.

    While eggs are cooking, dice onion and celery

    Peel cooled off eggs, place into a bowl with the rest of the ingredients. Using the back of a fork, mash and mix until it is your desired texture

    Serve on toasted bread and enjoy!

  • Ingredients:

    6 eggs

    3 tbsp mayonnaise

    1 tsp mustard of your choice

    ½ tsp salt

    ¼ tsp pepper

    ½ tsp dill

    ¼ tsp paprika for the mix and saving some for garnishing

    Optional: 1 ½ tsp relish or chopped up pickles

    Steps:

    Boil a large pot of water, putting in eggs carefully when the water has started to boil. Leave them in the water for 11 minutes. Remove eggs and place them into an ice bath.

    Peel cooled off eggs, cut in half, putting yolks into a bowl and the empty whites on a separate plate

    Mix egg yolks, mayonnaise, mustard, and spices in the bowl. Optional: add in relish or chopped pickles at this time. Mix and mash until your desired consistency

    Using a small spoon, place the mixture into the empty egg whites

    Garnish with extra paprika and serve

  • Ingredients:

    4 steaks of your choice

    2 tbsp olive oil

    2 tsp salt

    1 tsp pepper

    1 ½ tsp Italian seasoning

    1 tsp garlic powder

    4 tbsp butter

    Steps:

    Preheat grill to medium heat with light oil

    Mix spices in a bowl

    Lightly oil the steaks and pat an even layer of the spices all over them

    Place steaks on grill and cook at least 4 minutes on each side or more if desired

    Remove from grill, place on a plate, and let rest with a slice of butter on top

    Serve and enjoy!

  • Ingredients:

    3 lb of Yukon gold potatoes, cut into bite-sized chunks

    1 ½ tsp salt and 1 tsp pepper

    1 tsp garlic powder

    ½ tsp paprika or 1 tsp dried dill

    1 ½ cups mayonnaise

    1 cup diced apple

    2 ribs of celery diced

    ½ onion diced

    1 tbsp mustard

    Steps:

    Clean and dice potatoes into bite-sized chunks

    Add potatoes to a large pot with ¾ tbsp salt and water just covering the top. Bring water with potatoes to a boil, reduce to a simmer, and cook until the potatoes are tender (approximately 8 - 10 minutes). Drain and set aside for cooling

    Dice apple, onion, and celery

    In a separate bowl, mix diced apple, onion, and celery with the mayonnaise, mustard, and spices

    Add cooled potatoes to bowl with mix-ins and spice mixture

  • Ingredients:

    3 medium avocados

    ½ tsp garlic powder

    ½ tsp onion powder

    1 tsp salt

    ¼ tsp pepper

    ¼ tsp cumin

    1 lime

    1 ½ tbsp chipped cilantro

    ½ tomato diced

    ¼ red onion diced

    Optional: Fresh cotija cheese and pumpkin seeds

    Steps:

    Open avocados and remove the pit

    Mash avocados

    Dice tomatoes and onions

    Mix mashed avocado, tomatoes, onions, all spices, and juice from 1 fresh lime

    Serve with tortilla chips and enjoy!

    Optional: Add fresh cotija cheese and lightly toasted pumpkin seeds

  • Ingredients:

    4 ears of corn

    2 tbsp butter melted (or a neutral oil, for a vegan alternative)

    Paprika, to taste

    Black pepper, to taste

    Salt, to taste

    1 lime but into 4 wedges

    Optional: Freshly chopped cilantro

    Steps:

    Preheat grill to high heat with light oil

    Place corn directly on the grill and cook for 20 minutes, changing sides as they reach desired level of char

    Remove corn from heat and add melted butter with a grill brush

    Lightly add salt, pepper, and paprika to taste

    Squeeze quartered lime onto corn

    Add fresh cilantro, if desired

    Serve and enjoy!

  • Ingredients:

    4 sweet onions, cut into thin slices

    4 tbsp unsalted butter

    1 tsp salt

    ½ tsp pepper

    1 cup sour cream

    ¾ tsp garlic powder

    ½ cup mayonnaise

    Steps:

    Melt butter in a large pan over medium heat. When melted, add in all the slices of onions with approximately half the salt and pepper. Cook until the onions are just starting to soften. Turn down the heat to low. Cook onions for approximately 45 to 60 minutes, stirring regularly to prevent burning. When finished, onions should be a dark brown and smell sweet.

    In a separate bowl, mix the sour cream, mayonnaise, and the rest of the seasonings.

    Once onions have cooled slightly, add them to the bowl with the dip

    Add more salt, pepper, and garlic powder to taste

    Serve with corn chips and enjoy!
